荔枝木烟熏液的精制及挥发性成分分析 被引量:3

摘要 以岭南特色果木——荔枝木为材料,采用干馏法及低温净化处理制备荔枝木精制烟熏液,并采用气相色谱—质谱联用仪(GC-MS)分析测定得出,精制荔枝木烟熏液的挥发性风味成分中共有27种化合物,占烟熏液中化合物相对含量的93.92%,其中相对含量较高的有愈创木酚(25.59%)、4-甲氧基-3-甲基苯酚(16.45%)、4-乙基-2-甲氧基苯酚(9.01%)等酚类化合物以及糠醛(12.96%)等化合物,酚类化合物相对含量占比达到63.24%。 To lychee wood as materials, using dry distillation and purification of low temperature preparation of litchi wood smoked liquid, and by gas chromatography-mass spectrometry(GC-MS) volatile flavor components of litchi wood smoked liquid was determined. The result showed that 27 compounds were identified by gas chromatography-mass spectrometry(GC-MS). The relative content of the smoky compound was 93.92%, the relative content of phenolic compounds accounted for 63.24%, such as Guaiacol(25.59%),4-methoxy-3-methylphenol(16.45%), 4-ethyl-2-methoxyphenol(9.01%) and furfural(12.96%) And other compounds.
