摘要
测定、对比了石莼多糖及其脱蛋白与降解产物的硫酸根含量、吸湿保湿性及体外抗氧化活性.结果表明,石莼多糖粗品的硫酸根在碱性蛋白酶脱蛋白的过程中损失极显著(P<0.01),而在酸降解过程中不受影响(P>0.05).石莼多糖及其脱蛋白与降解产物均具有较良好的吸湿保湿性.此外,酸降解处理显著提高样品的总抗氧化能力(对ABTS^+·的清除率)和·OH清除力(P<0.05),但对DPPH·、O_2~的清除能力、铁氰化钾还原力的影响不大(P>0.05);而脱蛋白处理使上述5项抗氧化活性均极显著下降(P<0.01).
Sulfate content, hygroscopicity and moisturizing capacitiy and in-vitro antioxidantive activity of Ulva polysaccharide and its deproteinated and degradation products were deter^mined and analyzed. Results showed that sulfate content of crude Ulva polysac-charide (CUP) dropped significantly (P〈0.01) during deproteinization by alkaline protease, but almost remained the same level during partial degradative modification ( P 〉 0. 05 ) . CUP and its deproteinated and degradation products all maintained great hygroscopicitiy and moisturizing capacity. After degradation, total anti-oxidative capacity ( scavenging ability on ABTS+ ? ) and scavenging ability on ? 0H significantly enhanced ( P〈 0.05) , but its scavenging ability on DPPH ? , 02' and reducing ability on K4 [ Fe( CN) 6 ] did not change significantly (P〉0.05). While after deproteinization, all antioxidant activities of sample descended sig-nificantly (P〈0 .01 ).
