摘要
维生素C是柑橘类水果中最重要的营养成分之一。人们对新鲜柑橘类水果及其衍生产品需求的迅速增长促使越来越多的科研人员致力于研究影响维生素C含量的因素,将维生素C的含量作为评判果品的重要指标之一。文章主要总结采摘后影响柑橘果实维生素C含量的多种因素,以提高柑橘果实品质,增加经济效益。
Vitamin C is widely regarded as one of the most important antioxidants in citrus fruits. The rapidly growing demand for fresh citrus fruits and their derivative products has prompted more and more researchers to study factors affecting the vitamin C content. Vitamin C content is one of the important indicators to evaluate fruit quality. This review mainly discusses several postharvest factors influencing vitamin C content of citrus fruits, in order to improve the quality of citrus fruit and increase the economic benefit.
