摘要
以香蕉皮为原料,采用超声波辅助酸水解法提取可溶性膳食纤维,并通过单因素试验和响应曲面设计分析,建立二次回归模型,考查了超声时间、酸解温度、酸解时间、磷酸体积分数、料液比对可溶性膳食纤维得率的影响。结果表明,最优工艺条件以磷酸为提取液,超声时间10 min,酸解温度80℃,酸解时间90 min,磷酸体积分数8%,料液比1∶15(g∶m L);在此条件下所获样品得率20.75%,持水力4.93,持油力2.83,膨胀力9.76 m L/g。
The banana peel as raw material, by ultrasonic assisted acid hydrolysis to extract soluble dietary fiber, by estab-lished a quadratic regression model and etermine ultrasonic treatment time, extraction temperature, extraction time, acid concentration and material-liquid ratio according to the single-factor and response surface methodology. The result showed that the optimum conditions were phosphoric acid as extractant, ultrasound time 10 min, hydrolysis temperature 80 ^ , acid hy-drolysis time 90 min, phpsphoric acid concentration 8%, ratio of material to liquid 1-15 (g:mL ) . Under the conditions of the samples obtained, the yield was 20.75%, holding water 4.93 , holding oil 2.83 , swelling force 9.76 mL/g.
