摘要
为提高植物乳杆菌的贮存稳定性,本实验对植物乳杆菌的微囊化工艺进行研究。通过生物相容性实验和pH值稳定实验确定本实验选用的微胶囊壁材对植物乳杆菌无毒害作用,并能在与动物肠道接近的中性环境(pH7.0)中崩解。通过单因素和正交试验确定植物乳杆菌A409的最佳微胶囊制备工艺为采用4%的脱脂奶粉和5%的乳糖为保护剂,2.5%的海藻酸钠为壁材,2%的氯化钙为固化剂。微囊化的植物乳杆菌具有更强的高温耐受性,并能贮存更长时间。
In order to improve the storage stability of Lactobacillus plantarum, this experiment was study of the microcapsulation technology. Through the biological compatibility test and the pH value stability test, we determined that the microcapsule wall material of this experiment had no toxic effect on Lactobacillus, and can be disintegrated in the neutral environment which is close to the animal's intestinal tract.Lactobacillus plantarum A409 the best technology of microcapsules were determined by single factor test and orthogonal test; test results show that the use of 4% skim milk and 5% lactose as a protective agent, 2.5% sodium alginate as wall material, 2% calcium chloride as curing agent.The microcapsulation Lactobacillus plantarum has stronger heat tolerance and can be stored for longer time.
