蓄冷板摆放方式对冷链宅配过程的影响 被引量:17

摘要 本文以奶白菜为实验对象,对比研究了两种蓄冷板摆放形式(即顶部摆放和四周摆放)对箱内环境温度和奶白菜中心温度的影响,及宅配过程中奶白菜的品质变化情况。结果表明:蓄冷板四周摆放相比顶部摆放具有较大优势,四周摆放时箱内温升较平缓,可维持大约48 h箱内环境温度波动在3℃以内,保持了奶白菜较高的营养品质和商品性;而顶部摆放蓄冷板箱内温度上升较快,仅能维持约36 h箱内环境温度波动在3℃以内,其对应的奶白菜营养指标衰减较快,仅能维持奶白菜较高品质24 h左右。因此,建议在实际的宅配中,蓄冷板尽可能的四周摆放。 In this paper,the milk cabbages were chosen as experimental subjects.The effects of two different laying modes of cold plates(i.e.laying-top or laying-around) on environment temperatures in cold storage incubator,milk cabbages center temperatures and the changes of milk cabbages quality in delivery process were studied.The results show that laying-around mode in the incubator has a big advantage compared to laying-top mode.The temperatures of internal incubator increase gently with cold plate laying-around.Laying-around mode can also maintain internal temperatures of incubator within 3 oC and high nutritional and commercial quality of milk cabbages about 48 h.However,the temperatures of internal incubator increase fast with cold plate laying-top.And laying-top mode can only maintain internal temperatures of incubator within 3 oC about 36 h.What's more,the quality of milk cabbages declines quickly.Laying-top mode can only keep the high quality of milk cabbages about 24 h.So we suggest the laying-around mode should be selected in actual delivery process as far as possible.
