A Review of Recent Advance in Functional Edible Films Based on Composite Proteins

摘要 功能性可食性复合蛋白膜具有亲水性、可溶性、可生物降解性和抗菌性,在食品活性包装及生物制药领域对部分塑料具备良好的替代性。本文从包装工程的角度,介绍了其材料、成膜工艺、包装性能调控及抗菌性产品开发等相关研究状况,为其进一步的应用提供了依据。 Functional composite protein film is a newly exploited edible packaging material with hydrophilicity, solubility, bio-degradability and antimicrobial activity which demonstrates a great potential for functioning as an alternative polymer in food active packaging and biopharmaceuticals. From the point of view of packaging engineering, this article outlines the film materials, film-forming techniques, modification methods of film packaging characterization and antimicrobial film s' development, which is a basis for its further application.
