摘要
目前高端餐饮市场萎缩和转型困难重重,而大众餐饮发展迅猛,成为餐饮行业的中流砥柱。浙江省高端酒店餐饮转型与大众餐饮具有经营同质性、模式平移性等特征,通过采集、挖掘和应用大数据实现高端餐饮的"小时代"经营模式发展。
With the market shrinking and difficult transformation of high-end catering,public catering has been developing rapidly and become mainstay in the catering industry. In this paper,the feasibility of "tiny times"catering for the high-end hotels and restaurants in Zhejiang province is analyzed,and countermeasures and suggestions of specific implementation path and key issues about big data applications in the transformation of high-end hotel and restaurant are proposed.
