摘要
信阳茶文化历史悠久,自唐代以来就是名茶产地。"信阳毛尖"是中国当代十大名茶之一,然而由于地方史志资料所限,在对信阳地方茶史研究的过程中,信阳茶历代的加工方法和演变的过程始终是个学术空白。本文试图通过对各种史志资料和唐宋以来文学作品的分析,厘清历代信阳茶的加工制作方法和演变过程。
Xinyang tea culture has a long history, since the Tang Dynasty is the origin of tea. "Xinyang Maojian" is one of the ten famous tea in contemporary China. However, due to the limitations of the local history records, the process of Xinyang Tea's history and its evolution has always been an academic gap in the study of Xinyang's local tea history. This article tries to clarify the processing methods and evolution of Xinyang tea of different ages by analyzing various historical records and literary works since the Tang and Song Dynasties
