摘要
综述了牛乳脂肪球膜(MFGM)的结构,其脂类的组成和营养学意义。阐述了利用TLC,拉曼光谱法,GC-MS,LC-MS,HPLC-ELSD对MFGM中脂类进行定性、定量测定的方法,旨为改善牛乳体系稳定性提供理论依据,提高乳品工业含MFGM副产品的利用率。
The paper reviewed the structure, lipids composition, and lipids nutritional significance of the milk fat globular membrane (MFGM),introduced the methods of qualitative and quantitative determination of lipids in MFGM by using TLC, Raman spectroscopy, GC-MS, LC-MS, HPLC-ELSD.The aim of this paper is to provide a theoretical basis for improving the stability of milk system and in- crease the utilization of MFGM by-products in the dairy industry.
