乳制品加工企业全面质量控制认知与行为分析 被引量:3

摘要 利用421份调查问卷数据,从事前、事中和事后三方面分析乳制品加工企业关于全面质量控制的认知与行为。研究结果表明,受访企业对事前质量控制、部分事中质量控制(合作服务和生产环境维护)认知水平较高,在制定生产规范和维护生产环境方面行为较好,但在合作伙伴选择、原料奶验收、监控内容把握、生产档案建设和责任承担方面行为不够科学、规范、全面。为进一步提高乳制品加工企业全面质量控制认知水平,改善乳制品加工企业全面质量控制行为,政府应加大法规宣传力度和惩罚力度,乳制品加工企业应定期开展培训、树立供应链管理理念、加强优质奶源基地建设。 Based on 421 survey data, awareness and behavior of total quality control in dairy processing enterprises were analyzed from three aspects, which were the beforehand, the concurrent and the afterward. The results showed that the enterprises had a high level of awareness of the prior quality control, part of the quality control (cooperative service and production environment maintenance), and had a better behavior in the production of good production standards and the maintenance of the production environment, but in the choice of partners, raw milk acceptance, monitoring content to grasp, the production file construction and accountability and other behavior aspects were not scientific, standardized and comprehensive. In order to improve the awareness level and behavior of total quality control in dairy processing enterprises, the government should increase the intensity of propaganda and punishment, dairy processing enterprises should regularly carry out training, establish a supply chain management philosophy, and strengthen the construction of high quality milk base.
