摘要
芥末是中、西餐调味中广泛使用的一种味型,不仅广泛用于各种冷拌菜式,在热菜中也有所应用。着重探索芥末味型的不同调配工艺,并结合实例阐述其在菜品中的应用。
Mustard is widely used in western and eastern cuisine,both in cold and hot dishes. This article focused on the concocting methods of the mustard flavorings,and analyzed the application of the mustard flavorings in the dishes.
