摘要
自行设计问卷,对云南省(昭通、腾冲、宣威)干腌菜的制作过程中与之较长时间接触的材料使用情况开展了调查。调查显示:云南干腌菜制作过程中与之接触的材料不存在对干腌菜产生物理性、生物性污染的可能性,安全性问题为化学性污染,主要污染物质为金属类(特别是有毒重金属铅、镉)以及高分子有机化合物(聚氯乙烯等),并以此提出相应的对策来避免与之接触材料对干腌菜产生的影响。
A self-designed questionnaire is used to investigate the long-term contact materials usage situation in the production process of dried pickles in Yunnan province (Zhaotong, Tengchong and Xuanwei). The results show that there's no possibility of physical and biological pollution of the long-term contact materials in the production process of dried pickles in Yunnan province, the safety is mainly concentrated on the chemical pollution, the main pollutants are metals (especially toxic heavy metals, lead and cadmium) and high molecular organic compounds (PVC, etc. ). Some countermeasures are put forward to avoid the impact to the quality of dried pickles in Yunnan province.
