摘要
近年来社区居家养老照料中心凭借其本身的优势逐步成为社会养老的主要形式,而膳食服务在养老服务系统中占有重要的位置,对老年人身体健康发挥着重要作用。本文采用系统分析法构建了社区居家养老照料中心膳食服务标准体系,从膳食服务通用标准、膳食服务保障标准和膳食服务提供标准三个方面进行了研究。结果表明,我国社区居家养老管理中对老年人膳食规范的研究较少,对老年食堂食品采购规范、食品加工安全管理规范和膳食服务规范等几乎空白。因此,通过构建标准体系提高社区居家养老照料中心的膳食服务水平,在保障老年人膳食健康、提高社区居家养老水平的问题上发挥关键作用。
In recent years, healthy meal service takes a important position in the the elderly services. The standards system can improve the level of home care dietary care centers, protect the health of older persons, and thus solve the pension problems of the elderly become a important topic of current research. This paper applies the systematic analysis method of standardization, discusses in detail the relationship between the classification of home care service system of care centers for meals, and the scope of practice relationship, home care and care centers catering system for the Construction. The results shows that community home-care centers catering services are mainly provided by the common base, meals and catering service support three sub-system structure, where there is lack of relevant research and regulations, and certain criteria need to be developed or revised. Establishing the standards system of meal services in home care center can improve the diet, protect the health of the elderly, and improve the level of community home- based care, solving the problem of home care by new ideas and methods.
