摘要
目的了解河南省某预包装熟肉制品生产加工过程的各个环节中单核细胞增生李斯特菌的污染及分布情况。方法按照国家食品污染和有害因素风险监测工作手册方法,于2015~2017年的第二、三季度在河南省某熟肉制品厂的生制品车间、熟制品车间和包装灭菌间分别采集原辅料、中间产品、成品、终成品及环境涂抹物样品430份,依据国标方法进行单核细胞增生李斯特菌的检验。结果 430份样品中单核细胞增生李斯特菌的检出率为16.98%,2015年的检出率(27.67%)高于2016年(7.64%)和2017年(18.18%)(P<0.01),第二季度检出率(22.74%)高于第三季度(11.41%)(P>0.05),生制品车间的检出率(41.91%)较高,且不同车间的检出率差异有统计学意义(P<0.01)。结论该熟肉制品加工厂单核细胞增生李斯特菌的检出率出现逐年降低的趋势,生制品车间采集的样品污染率最高。
Objective To understand the contamination and distribution of pre-packaged cooked meat products with Listeria rnonocytogenes during the food processing chain in Henan province. Methods Based on the handbook of National Food Safety Risk Surveillance, raw materials, intermediate products, finished products, final products and environment associated samples were sampled during the second and third quarters of 2015-2017.430 samples were tested for L. monocytogenes based on the national standard method. Results The detection rate of L. monocytogenes in 430 sam ples was 16.98%. The detection rate in 2015(27.67%)was higher than that in 2016(7.64%) and 2017(18.18%)( P % 0.01). The detection rate in the second quarter(22.74%)was higher than that in the third quarter(11.41%), and the difference of detection rate was not significant( P 〉0.05). The detection rate of the raw product workshop (41.91 % )was higher and the difference among samples from different workshops was statistically different ( P 〈0. 01). Conclusion The detection rate of L. monocytogenes tends to decrease year by year, and L. rnonocytogenes detection rate is higher in raw products workshop.
