摘要
我国有很多少数民族群众制作的具有地方特色和民族特色的传统干酪,资源优势和环境优势使这些具有浓郁民族特色的干酪加工工艺独特,营养丰富。本文综述国内地方民族特色干酪的研究现状,种类有广西特色干酪、云南特色干酪、新疆特色干酪、内蒙古特色干酪、青藏高原特色干酪,并提出我国民族特色干酪今后的发展方向。
Our country has many minorities of the mass production with local characteristics and national characteristics of the traditional cheese. Resource and environmental advantage to make these cheese with rich national characteristics and nutrition. These cheese processing technology is unique. This paper reviewed the research situation of domestic ethnic cheese, the characteristic cheeses including the kinds of Guangxi, Yunnan, Xinjiang, Inner Mongolia and Qinghai- Tibet Plateau, and put forward the our country national characteristic cheese the development direction in the future.
