摘要
以氧化甘油三酯聚合物(TGP)为内源性指标依据,对多个不同品牌的冷榨芝麻油和不同来源的精炼芝麻油、特级初榨橄榄油和精炼橄榄油中TGP含量进行比较研究。结果发现,冷榨油与精炼油在TGP上有极显著性差异(P<0.01),冷榨油的TGP含量均小于0.15%,而精炼油中的TGP含量均大于1.0%,用TGP的含量来鉴别冷榨油和精炼油具有可行性。
Based on oxidized triacylglycerol polymers(TGP) as an endogenous index, the content of TGP many kinds of brands cold-pressed sesame oil with different original refined sesame oil, extra virgin olive oil and refined olive oil were compared, The tesults showed that a significant difference(P 〈 0.01) between the content of TGP in cold-pressed oils and refined oils was found. The content of TGP in cold-pressed oils were less than 0.15%, and that in the refined oil were more than 1.0%. It was feasible to identify cold-pressed oils and refined oils by the content of TGP.
