水杨酸处理对山楂生物活性物质和抗氧化活性的影响 被引量:1

摘要 将大果山楂分别用1.5、3.0 mmol/L水杨酸浸泡处理5 min后于室温(25±2)℃条件下贮藏,以蒸馏水为对照对其还原糖、总酸、总酚、总黄酮、总三萜酸、抗氧化活性的变化进行跟踪测定,研究水杨酸处理对采后山楂生物活性物质及抗氧化活性的影响。结果表明,水杨酸处理会降低果实贮藏期间的还原糖含量,对总酸含量影响较小,可有效促进山楂贮藏期间(2~15 d)生物活性物质的合成与积累及抗氧化活性的提高,其适宜处理剂量为3.0 mmol/L,该剂量下总酚、总黄酮、总三萜酸含量与对照相比最大增加量分别为18.1%、13.9%、4.2%;DPPH·清除率和还原力最大分别比对照增加10.9%和22.4%。说明3 mmol/L水杨酸处理可用作提高山楂贮藏期间生物活性物质含量和抗氧化活性的采后处理手段。 Hawthorn fruits (Crataegus pinnatifida Bge. var. major N. E. Br.) were dipped in 1.5 and 3.0 mmol/L of salicylic acid for 5 min respectively before storing at room temperature (25±2)℃. Effects of salicylic acid treatment on contents of reducing sugar, titratable acid, total phenolics, total flavonoids and total triterpene acids, as well as antioxidant capacity of hawthorn fruit were studied. Results showed that, salicylic acid treatment decreased reducing sugar content, had little effect on titratable acid content, promoted the synthesis and accumulation of bioactive sub- stances and the increase of antioxidant capacity during storage(2-15 d). The optimum dosage of SA was 3.0 mmol/L, the contents of total phenolics, flavonoids and triterpene acids increased by 18.1%, 13.9% and 4.2%, respectively at this dosage. DPPH" scavenging capacity and reducing power increased by 10.9% and 22.4%, respectively. The con- clusion indicated that, 3 mmol/L SA treatment could be a promising post-harvest technique to increase the bioactive substances content and antioxidant activity of hawthorn fruits during storage.
