烟台羊汤三杰:莱州·福山·栖霞

摘要 据说鲁菜分为济南菜、孔府菜和福山菜(海派)三大菜系,前两者吃肉较多,后者主要以海鲜为特色。整体而言,在胶东地区,养羊的少,吃的也不算多。不过,即便如此,在烟台众多县市区当中,也还能找出几个比较有代表性的地区。根据查阅资料和大厨总结,烟台羊汤大概可以分为三大流派:莱州羊汤、福山羊汤和栖霞羊汤。 As the story goes, the Lu Cuisine was divided into three styles of cooking: Jinan Cuisine, Confucian Cuisine, and Fushan Cuisine(in maritime style), the former two of which mainly focused on meat and the latter specialized in the seafood. Generally speaking, in Jiaodong area, fewer goats were raised or served as food. Nevertheless, even so, you can still name some representative regions among all the counties and districts in Yantai. According to files and chefs, the mutton soup in Yantai can be roughly classified into three schools: Laizhou mutton soup, Fushan mutton soup, and Qixia mutton soup.
