摘要
[目的]通过分析谷饲育肥对牛肉中脂肪酸组成及含量变化的影响,为平凉红牛谷饲育肥技术的研究和应用奠定理论基础。[方法]分别采集6头谷饲育肥和6头传统育肥的平凉红牛背最长肌(12-13肋骨之间),利用气相色谱仪对肌肉中脂肪酸组成及含量进行测定分析。[结果]谷饲育肥和传统育肥的平凉红牛背最长肌中,饱和脂肪酸的含量前者显著低于后者(P<0.05);单不饱和脂肪酸的含量前者显著高于后者(P<0.05);多不饱和脂肪酸的含量前者显著低于后者(P<0.05),但其中共轭亚油酸的含量前者显著高于后者(P<0.05);肌内脂肪含量(IMF)前者显著高于后者(P<0.05);同时,n6/n3多不饱和脂肪酸比前者显著低于后者。[结论]谷饲育肥和传统育肥的平凉红牛背最长肌中脂肪酸组成相近,但含量差异显著,且前者肌内脂肪含量更高,n6/n3多不饱和脂肪酸比更合理,说明谷饲育肥有助于平凉红牛肌肉中大理石花纹的形成及其食用和营养价值的提高。
[Objective] To provide the theoretical foundation for further development of fattening Pingliang red cattle, fatty acid composition and content in longissimus dorsi of Pingliang red was under fattening technology with cereals and normal diets, were determined respective [Method] Longissimus dorsi Pingliang red cattle, which 6 fattened with cereals and 6 wi ly th cattle, which in this study. normal diets, were collected, respectively. Fatty acid composition and content in the muscles were determined via gas chromatography. [Result] The content of unsaturated fatty acids, polyunsaturated fatty acids and n6/n3 polyunsaturated fatty acid ratio in longissimus dorsi of Pingliang red cattle that fattening with cereals were significantly lower (P〈0.05) than which fattening with normal diets. However, the content of monoun- saturated fatty acids, conjugated linoleie acid and intramuscular fat in longissimus dorsi of Pingliang red cattle that fattening with cereals was significantly higher (P〈0.05) than others. position of fatty acid in longissimus dorsi of Pingliang red cattle that fattening wit [Conclusion] The com- cereals or normal diets were similar while the content were different. Moreover, cattle which fattened with cereals had higher in- tramuscular fat content and more reasonable n6/n3 polyunsaturated fatty acid ratio with normal diets. It suggests that, under fattening with cereals, the Pingliang red than cattle which meat fattened could getrich marbling and high edible and nutritional value.
