不同屠宰体重对梅山杂交猪胴体性能及肉质的影响 被引量:4

摘要 选择30头梅山二元杂交商品猪(杜洛克×梅山猪)进入试验,在相同饲养水平和饲养环境下,分别于100kg、110kg、120kg体重时进行屠宰,每个组合屠宰5头,比较不同屠宰体重猪的胴体性能及肌肉品质。结果表明:120kg组合屠宰率、胴体重、胴体长各项指标最高,分别为75.3%、93.10kg、104.57cm;100kg组合瘦肉率、眼肌面积、系水力最高,分别为52.5%、35.18cm^2、92.40%;三个屠宰体重组合的肉质指标都在优质猪肉的范围内。综合考虑,梅山杂交猪的适宜屠宰体重为100kg。
