摘要
《食品安全国家标准(GB2762-2017)》规定了谷物及其制品中重金属(砷、汞、铬、铅、镉)的限量指标。本文对大米样品中重金属元素检测的全过程(前处理、空白值影响、仪器条件优化、干扰及消除技术、分析方法的选择、质量控制手段等)进行了探讨。同时,对所有检测方法的局限性进行了总结,最后得出电感耦合等离子体质谱法是检测痕量元素最实用的分析方法之一,值得我们推广与应用。
The National Standard for Food Safety (GB2762-2017) stipulates the limits for heavy metals (arsenic, mercury, chromium, lead, cadmium) in grains and their products. This article discusses the whole process of detecting heavy metal elements in rice samples (pretreatment, blank value effects, instrument condition optimization, interference and elimination techniques, analysis method selection, quality control methods, etc.). At the same time, the limitations of all detection methods are summarized and it is pointed out that inductively coupled plasma mass spectrometry is one of the most practical analytical methods for the detection of trace elements. It is worth our promotion and application.
