茶渣非水溶性膳食纤维脱色工艺优化及其理化特性研究 被引量:4

Study on Decoloring Process Optimization of Tea Residue Water-Insoluble Dietary Fiber and Its Physicochemical Properties

摘要 以茶渣非水溶性膳食纤维(IDF)为研究对象,以H_2O_2浓度、pH及温度为考察因素,通过单因素试验及正交设计对其最佳脱色工艺进行研究,并探究其活性;同时采用离体试验模拟人体胃和肠道pH环境,对茶渣IDF的理化特性进行分析。结果表明,最佳脱色工艺为H_2O_2浓度5.5%、pH 10、温度45℃,白度为32.91%,且产品的持水力及膨胀力均大幅增加;茶渣IDF的理化特性为对不饱和脂肪、饱和脂肪的吸附量分别为2.786和2.948 g/g,在酸性及中性条件下对胆固醇吸附量分别为4.510和8.627 mg/g,对胆酸钠吸附量为15.841 mg/g,均高于近年来所报道的大多数膳食纤维产品。 By taking tealeaf water-insoluble dietary fiber(IDF) as research object, and using H2O2 concentration, pH and temperature as investigating factors, the optimum decoloration process was studied by single factor experiment and orthogonal design, and its activity was investigated. At the same time, in vitro experiments, simulated human gastric and intestinal pH, physicochemical properties of tea residue IDF were analyzed. The results showed that the optimum decoloration process was H2O2 concentration 5.5%, pH 10, 45 ℃, and whiteness 32.91%, and the water holding capacity and swelling power of the products increased greatly. The physicochemical properties of tea residue for IDF showed that the adsorption capacity of unsaturated fatty acids and saturated fats was 2.786 and 2.948 g/g, respectively; The adsorption amount of cholesterol in acidic and neutral conditions was 4.510 and 8.627 mg/g, respectively; The adsorption amount of sodium cholate was 15.841 mg/g; Those indexes were higher than most dietary fiber products reported in recent years.
