摘要
粮食制品的质量要求,感官鉴别检验的指标主要有:色泽、口感、气味、水分、杂质、纯度。粮食制品掺伪方式主要有:抽取、掺杂、粉饰、掺兑及以假乱真。本文主要阐述了粮食制品的质量评价及掺伪方式,陈化粮的检验与评价,酸败粮的检验,霉变粮的检验技术,粮食中掺滑石粉、石膏粉的检验,粮食中掺硼砂的检验,粮食中增白剂的检验。
The quality requirements of grain products and the indicators of sensory identification tests mainly include:color,texture,odor,moisture,impurities and purity. The methods of adulteration of food products mainly include:extraction,doping,whitewashing,blending and falsehood. This article mainly elaborates the quality evaluation and adulteration of grain products,the inspection and evaluation of Chenhualiang,the inspection of acid-failed grain,the inspection technology of mildew grain,the inspection of talcum powder and gypsum powder in food,and the addition of borax in food.
