摘要
介绍了茶多酚在水产品中的保鲜机理,综述了茶多酚在水产品贮藏保鲜中的最新进展,分析了目前研究中存在的问题,并展望了茶多酚的应用前景。
The mechanism of tea polyphenols in fresh keeping aquatic products were introduced.The most advanced research on aquatic products storage using tea polyphenols were summarized. In addition, some suggestions for future development were proposed.
