摘要 以木薯未成熟叶为花青素(以矢车菊素代表)提取原料,研究其在可见光条件下的最高吸收波长和不同提取剂的提取效果,并采用单因素及正交试验法分别对提取条件进行分析,利用SAS软件进行提取工艺条件优化。结果表明木薯叶花青素最佳可见光吸收波长为533 nm,提取剂为酸性甲醇时提取效果好,最优提取工艺为:以酸性甲醇为提取溶剂,料液比为1:20,提取温度为60℃,提取时间为4 h,在此条件下,提取的木薯叶花青素含量为158.78 mg/hg。 Cassava immature leaves were subjected to analyze the conditions of the extraction for anthocyanin (represented by cyanidin) based the orthogonal experiment method and optimized extraction conditions by SAS software. Results showed that the best visible light absorption wavelength was 533nm based the acid methanol extraction agent and the optimum conditions for the extraction of anthocyanins were as following: with acidic methanol as the extraction solvent, liquid ratio 1:20, extraction temperature 60 ℃, and the extraction time 4 hours. Under the condition, an anthocyanin extraction rate up to 158.78 mg/hg could be achieved.
