摘要
四川是以肉类为主导的畜牧大省,作为产业龙头的加工环节的发展成为引领产业的关键。而先进加工技术应用的缺乏和现代装备的滞后,成为制约产业发展的瓶颈。未来的发展目标,是通过创新平台建设,凝聚高校、科研院所专家团队,聚集产业企业集群,围绕产业发展需求,重点在质量安全可追溯体系建设,传统产品的品质和安全性提升,以及屠宰副产物联产节能、高效环保利用等进行技术攻关。本文以分析肉类加工产业现状为基础,对未来技术发展进行了分析探讨。
Sichuan is a meat-oriented animal husbandry province, the development of processing link as the leading industry has become the key to leading the industry. The lack of application of advanced processing technology and the lag of modern equipment have become the bottleneck restricting industrial development. The future developing goal is to build an innovative platform,unite team of experts from universities and research institutes,gather industrial clusters. Around industrial development demand, focusing on the development of quality and safety traceability systems, enhance quality and safety of traditional products, and slaughter By-product cogeneration energy saving, efficient use of environmental protection and other technical research. Based on the analysis of meat processing industry status, this paper analyzes and discussions the future technological development.
