摘要
目的了解河北省市售玉米面中玉米赤霉烯酮(zearalenone,ZEN)和伏马菌毒素B1(fumonisin B1,FB1)、B2(fumonisin B2,FB2)的污染情况,评估污染带来的安全风险,进一步为食品安全的监管提供依据。方法采集河北省11个地市市售玉米面共80份,用液相色谱串联质谱仪(LC-MS/MS)检测ZEN和FB1、FB2的污染水平,并对其污染现状进行分析。结果 35份样品检测出ZEN,检出率为43.75%;5份样品检测出FB1,检出率为6.25%;4份样品同时检测出ZEN和FB1,检出率为5.00%。全部样品均未超出国家限量标准和国际推荐限量标准。结论河北省2014年市售玉米面中ZEN和FB1均有检出,且ZEN的检出率较高。应加强对市售玉米面及其相关食品中ZEN和FB的长期监测,以对消费者健康起到积极的保护作用。
Objective To understand and assess the security risks associated with the contamination status of fumonisin B1( FB1),fumonisin B2( FB2) and zearalenone( ZEN) in the maize flour from the market of Hebei Province,which can further provide the basic evidence for food safety supervision. Methods A total of 80 commercial cornmeal samples were collected from11 cities in Hebei Province. The levels of ZEN,FB1 and FB2 were detected by liquid chromatography-tandem mass spectrometry( LC-MS/MS),and the contamination status was analyzed. Results ZEN was founded in 35 samples with the detection rate of43. 75%,and 5 samples contains FB1,the detection rate of FB1 was 6. 25%. Both of ZEN and FB1 were detected in 4 samples,and the detection rate was 5. 00%. The detective contents of ZEN and FB1 did not exceed the national limit standard and international recommended limit standard. Conclusion ZEN and FB1 have been found in the maize flour form the market of Hebei Province in 2014,and the detection rate of ZEN is higher. In order to protect the health of consumer,it's still necessary to keep monitoring the relative contamination status of ZEN and FB in maize and its products for a long term.
