摘要
目的改良食品中亚硝酸盐的检测方法,准确测定火腿肠中亚硝酸盐的含量。方法在GB 5009.33-2010食品中亚硝酸盐与硝酸盐的测定方法基础上对样品提取液进行溶液色度校正,于波长538 nm处测定吸光度,并与国标法进行结果比较。结果改良法加标回收率在89.0%~105.0%之间,平均回收率96.0%,相对标准偏差1.5%;国标法加标回收率在65.0%~80.0%之间,平均回收率72.0%,相对标准偏差4.5%;采用改良法与国标法分别测定火腿肠中亚硝酸盐含量,测定结果差异有统计学意义(t=9.33,P<0.05)。结论改良法能消除样品提取液色度干扰,适用于火腿肠中亚硝酸盐含量的准确测定。
Objective To improve the detection method of nitrite in food and to determine the content of nitrite in ham. Methods On the basis of the determination method of nitrite and nitrate in GB 5009. 33-2010,the absorbance correction of the sample extract is carried out,and the absorbance is measured at 538 nm,and the results are compared with the national standard method. Results The recoveries of improvement are 89. 0% ~ 105. 0%,the average recoveries are 96. 0% and the relative standard deviations are 1. 5%. The recoveries of national standard method are 65. 0% ~ 80. 0%,the average recoveries are 72. 0% and the relative standard deviations are 4. 5%. Determination of nitrite content in ham by improvement method and national standard method,the difference is statistically significant( t = 9. 33,P〈0. 05). Conclusion The improved method can eliminate the absorbance interference of the sample extract,which is suitable for the determination of nitrite in the ham.
