摘要 被称为茶多酚的物质是存在于茶中的各种多酚类物质的总称。主要含有黄烷醇类,兼有较多的花色苷类,以及黄酮类等物质。在水、有机溶剂中溶解性很好,有较明显的苦味,但对人体无毒害作用。茶多酚在保健、食品、化工等许多领域都发挥着重要的作用,因此得到了国内外的广泛关注。综述了传统提取技术与辅助提取技术等多种茶多酚的提取技术,并对其各种优点缺点加以简述、对比。 Various polyphenols in tea are collectively called as tea polyphenol, containing flavanols, anthocyanins, flavonoids, and so on. It has good solubility in water and organic solvents, and it is bitter and non-toxic. Tea polyphenols play an important role in many fields, such as health care, foodstuff and chemical industry. It has received wide attention at home and abroad. The extraction technology and auxiliary/extraction technology of many kinds of tea polyphenols were reviewed, and various advantages and disadvantages were briefly summarized and compared.
