壳聚糖/纳米二氧化钛涂膜对休眠后期马铃薯品质及生理指标的影响 被引量:6

Effects of Chitosan/Nano Titania Dioxide Coating on Potato Quality and Physiological Index in Late Stage of Dormancy

摘要 为了延长马铃薯的货架期,以休眠后期的马铃薯为试验材料,对其进行不同浓度的二氧化钛(TiO_2)结合0.1%壳聚糖涂膜处理,研究涂膜对马铃薯品质及生理指标的影响。结果表明:与不做处理(对照)相比,0.1%壳聚糖结合0%、1%、2%、3%TiO_2涂膜处理均能不同程度地抑制马铃薯可溶性固形物、淀粉、抗坏血酸、总酚含量的下降,减缓多酚氧化酶(PPO)、过氧化物酶(POD)活性及发芽率的升高速率。其中,0.1%壳聚糖结合2%TiO_2涂膜处理对马铃薯的保鲜效果最为显著,货架期第8天,马铃薯并未发芽,总酚、抗坏血酸含量分别较对照提高了105.6%、18.1%,PPO、POD活性较对照分别降低了28.1%、21.8%,可溶性固形物及淀粉含量分别为7.1%和14.0%。综上可见,0.1%壳聚糖结合2%TiO_2涂膜处理能较好地保持休眠后期马铃薯的品质,延长其货架寿命。 In order to prolong the shelf life of potato,effects of different concentrations of titania( TiO_2)combined with chitosan coating on quality and physiological indexes of potato in late stage of dormancy were studied. The results showed that compared with the control without coating,0. 1% chitosan combined with 0%,1%,2% and 3% titanium dioxide coating could inhibit the decrease of soluble solids,starch,ascorbic acid and total phenol contents,slowed down the increase of polyphenol oxidase,peroxidase activity and germination rate. The effect of the treatment with 0. 1% chitosan and 2% titanium dioxide coating on potato was the most significant. After 8 days of storage,the potatoes didn't germinate. Compared with control,total phenol and ascorbic acid contents increased by 105. 6%,18. 1%; PPO and POD activities decreased by 28. 1%,21. 8%; the soluble solids and starch contents were 7. 1% and 14. 0% respectively.Sum up,0. 1% chitosan combined with 2% titanium dioxide coating could keep the quality of potato in late stage and extend its shelf life.
