摘要
在油脂酯交换反应过程中 ,产物油脂往往需要进行Sn - 2位脂肪酸组成的鉴别与分析。由于反应生成物 (如脂肪酸、脂肪酸甲酯、甘三酯、甘一酯、甘二酯等 )的性质十分相似 ,要研究酯交换过程中甘三酯的Sn - 2位脂肪酸组成 ,所需要甘三酯的量往往需要很多块TLC板的分离才能实现 ,致使实验费用增加 ,效率降低。本文主要研究了脂肪酸、脂肪酸甲酯以及硅胶对油脂Sn - 2位脂肪酸组成分析的影响。实验结果证明 :脂肪酸、脂肪酸甲酯以及硅胶在一定的条件下不影响油脂Sn - 2位脂肪酸组成分析的结果。这种方法是对国际纯粹化学和应用化学联合会 (IUPAC)方法的改进和补充 ,大大简化了分析过程 ,可以广泛地应用于相关的研究与分析中。
The fatty acid composition of the 2-position in triglyceride of fats and oils needs to be analyzed and identified during the process of transesterification of fats and oils.Because the properties of the products(such as fatty acids,fatty acid methyl esters,monoglyceride and diglyceride ,et al)are similar,usually many pieces of thin layer chromatography(TLC)plates are needed to obtain pure triglyceride for the 2-position fatty acid analysis.This increases experiment cost and decreases work efficiency.In this project,the effect of fatty acids,fatty acid methyl esters and silica gel on the analysis of the 2-position fatty acid composition in triglyceride transesterified was investigated primarily.The data indicate that the existence of fatty acids,fatty acid methyl esters and silica gel have no effect on the analysis results of the 2-position fatty acid composition under a certain condition.This method is an improvement and supplement to the method of International Union of Pure and Applied Chemistry(IUPAC).It simplifies the analysis process sharply,and could be widely applied in related analyses.
