摘要
蔗糖作为研究对象,酸为催化剂,采用WZZ-2B全自动旋光仪记录蔗糖在水解过程中的旋光度α,利用Origin软件对α-t数据进行非线性拟合,计算蔗糖水解反应的速率常数,考察各种因素对蔗糖水解的影响。结果表明:随着酸强度增强、浓度增大、温度升高,反应的速率常数逐渐增大,水解的速率加快。根据Arrhenius公式计算可知,在30~50℃,反应的活化能为70.18 k J·mol^(-1)。利用Origin软件进行非线性拟合无需测定蔗糖完全水解时的α_∞,不仅缩短了实验时间而且提高了实验数据的准确性。
Sugar was used as the object of study, acid as catalyst, WZZ-2B automatic polarimeter was used to recorder the optical rotation of hydrolysis of sugar, nonlinear fitting of α-t using Origin software,calculate rate constants of sugar hydrolysis reaction,investigate the factor of reaction. The re-sults show that : the rate constant is gradually increasing with the acid strength enhance,the concentra-tion increase and the temperature rise. According to Arrhenius formula,activation energy were calculat-ed between 30-50℃:E = 70. 18KJ·mol Nonlinear fitting using Origin software,there is no need to determine the α∞. Not only save experiment time but also increase the accuracy of the experiment.
