鱼类因其肉质鲜美,一直是人们餐桌上的重要食材,但是,长久保持鲜活与长距离运输也一直是鱼类养殖业的难题。现今,国内外市场对鲜活水产品的需求与日俱增,但相对落后的运输技术不但严重影响了鲜活水产品的成活率,也加大了市场成本。传统的鲜活水产运输需要大量的运载水,易受到各种现实条件的限制,而且运载量小、死亡率高、运输成本高,因此,无水运输将逐步取代传统的运输方式成为水产运输的主流。如何在降低运输技术门槛的情况下加大水产品的成活率,这也是国内外的研究重点,这其中的要求因水产品种类的不同而各有不同,但其中所涉及的各种影响因素及方法的可行性,可以为活鱼运输提供相关的参考意见。
