摘要 鱼类因其肉质鲜美,一直是人们餐桌上的重要食材,但是,长久保持鲜活与长距离运输也一直是鱼类养殖业的难题。现今,国内外市场对鲜活水产品的需求与日俱增,但相对落后的运输技术不但严重影响了鲜活水产品的成活率,也加大了市场成本。传统的鲜活水产运输需要大量的运载水,易受到各种现实条件的限制,而且运载量小、死亡率高、运输成本高,因此,无水运输将逐步取代传统的运输方式成为水产运输的主流。如何在降低运输技术门槛的情况下加大水产品的成活率,这也是国内外的研究重点,这其中的要求因水产品种类的不同而各有不同,但其中所涉及的各种影响因素及方法的可行性,可以为活鱼运输提供相关的参考意见。 Because of its delicious meat quality, fish has always been an important ingredient on people’s dining tables. However, long-term maintenance of fresh and long-distance transport has also been a problem in the fish farming industry.Nowadays, the demand for live aquatic products in domestic and foreign markets is increasing. However, relatively backward transportation technologies have not only seriously affected the survival rate of live aquatic products, but also increased the market cost. Traditional live aquatic transport requires a lot of water, which is subject to various practical conditions. It also has a small amount of cargo, high mortality, and high transportation costs. Therefore, water-free transportation will gradually replace the traditional mode of transportation to become the mainstream of aquaculture transportation. How to increase the survival rate of aquatic products in the context of reducing the threshold of transportation technology is also a research focus at home and abroad. The requirements among these vary according to the type of aquatic products, but the various factors involved in the feasibility of the method can provide relevant reference for live fish transportation.
