摘要
在前期研究中,用克隆的方法在发酵食品体系中检测到寡发酵乳杆菌Lactobacillusoligofermentans。为了探寻寡发酵乳杆菌的功能及可能的应用潜力,本研究利用五碳糖为基质分离寡发酵乳杆菌,并利用培养及接种的方法测试其发酵特性。结果显示利用木糖作为基质可分离获得寡发酵乳杆菌(SH-Y15);液体培养时SH-Y15与寡发酵乳杆菌标准菌株L.oligofermentans AMKR18及L.plantarum(LP)相比显示良好的耐低温性和耐酸性,在10℃和p H值为3时有显著生长(P<0.01);SH-Y15在低温下对亚硝酸盐的降解能力显著高于另外两株菌,在五碳糖基质上亚硝酸盐降解效果优于六碳糖基质。综上可见,SH-Y15耐低温、耐酸,降解亚硝酸盐能力显著,具有很好的应用潜力。
In our previous study, Lactobacillus oligofermentans was detected in the food fermentation system. In order to explore the function and potential application of L. oligofermentans, we used the media containing pentose to isolate the L. oligofermentans and tested its nitrite-degrading capacity. The results showed that L. oligofermentans (SH-Y15) can be isolated from media containing xylose.The strain SH-Y15 had a significant growth (P〈0.01) at lower temperature (10 ℃) and in more acidic environment (pH=3) than L. oligofermentans AMKR.18 and L. plantarum. The SH-Y15 showed a good ability to degrade nitrite at 10~25 ℃. The nitrite in the media containing xylose decreased faster than in the media containing glucOse. All results indicated that the SH-Y15 had a great potential to control nitrite degradation during the fermentation.
