摘要
研究酶解离心法提取鹅肥肝油最佳工艺。p H值、速率、时间3个条件对工艺影响显著(P<0.05)。最佳条件为碱性蛋白酶;p H8.5;酶解60℃、3.5 h;离心14 500 r/min、30 min,鹅肥肝油提取率99.25%。此方法所得鹅肥肝油不饱和脂肪酸居多,棕榈酸25.08%、棕榈烯酸4.25%、油酸56.28%、肉豆蔻酸0.83%、亚油酸1.50%,共占71%以上。酶解离心法可有效防止不饱和脂肪酸氧化,较好保持油脂活性,能耗低效率高,符合产品卫生要求。
Enzymatic centrifugation extraction of goose fat liver oil had be studied. The p H,rate and time had significant effect on the process(P〈0.05). The best conditions were alkaline protease;p H 8.5;enzymatic hydrolysis at 60 ℃,3.5 h;centrifugation on 14 500 r/min,30 min. Goose fat liver oil extraction rate was 99.25 %.This method got goose fat liver oil that had lots of unsaturated fatty acids,for instance palmitic acid 25.08 %,palmitoleic acid 4.25 %,oleic acid 56.28 %,myristic acid 0.83 %,linoleic acid 1.50 %,a total of 71 % or more. Enzymatic centrifugation extraction can effective prevention of the oxidation of unsaturated fatty acids,had some merits that good grease activity,low energy,efficient,and met product hygiene requirements.
