丁香酚改性产物对葡萄采后保鲜的作用 被引量:7

摘要 以巨峰葡萄为试验材料,研究丁香酚改性产物保鲜剂对葡萄采后保鲜的影响。结果表明:浸泡时间3min、贮藏温度15℃、保鲜剂浓度为5%、乳化剂浓度为0.1%组合处理葡萄贮存25 d,此处理后失重率为6.08%,相较于CK1(空白保鲜剂处理)、CK2(丁香酚保鲜剂处理)组和CK3(NW20保鲜剂处理)分别降低10.16%、6.51%和4.79%,均具有显著性(P<0.05);腐烂率为6.14%,相较于CK1、CK2和CK3分别降低12.28%、8.12%和4.84%,均具有显著性(P<0.05);整个贮藏期间,丁香酚改性保鲜剂处理后呼吸强度、可溶性固形物含量、维生素C含量、丙二醛(malondialdehyde,MDA)含量、还原糖含量均要优于其他处理组,都有显著性差异(P<0.05)。说明丁香酚改性保鲜剂能够有效延缓果实衰老,对葡萄采后保鲜有很好的效果。 Taking Jufeng grape as test material,the effect of preservative of eugenol modified product on postharvest preservation of grape was studied. The results showed that compared with CK1(blank preservative treatment),CK2(eugenol preservative treatment)and CK3(NW20 preservative treatment),soaking time was3 min with the preservative concentration was 5 %,the emulsifier concentration was 0.1 %,and the weight loss rate was 6.08 %,significantly reduced water loss in grape by 10.16 %,6.51 % and 4.79 %,The rotten rate was6.14 %,and significantly decreased the incidence of decay by 12.28 %,8.12 % and 4.84 %(P〈0.05)after25 days storage at 15 ℃,respectively. The respiration intensity rate,soluble solids content,vitamin C content,malondialdehyde(MDA),reducing sugar content all better than another treatment group during the whole storage period,after treated with eugenol modified preservative,all have significant difference(P〈0.05). It means the modified product of eugenol can delay aging and has the very good effect on the fresh grapes.
