摘要
针对某款烟熏炉在使用过程中出现的烟熏效果不佳、加热仓内各部分食物熏制的成熟及着色不同步的问题,提出了通过对烟熏炉加热仓的结构改进来改善加热仓内流场分布、从而提高烟熏效果的方法。采用CFD技术建立了加热仓的二维、三维仿真模型,通过仿真计算,对加热仓结构改进前后的烟熏气流场的分布进行比较分析。研究结果表明,改进后的加热仓结构可有效改善加热仓内烟熏气流场的分布。
A method of improving the flow distribution within the heating chamber to enhance the fumigating effect through changing the fumigation oven structure based on the CFD technology were investigated in this study..We established a two-dimensional and threedimensional simulation model for the heating chamber,and the distribution of the fumigation vapor oven was compared by simulation.The results which showed that the optimized structure of the heating chamber could improve the distribution of the vapor flow field.
