豆腐柴叶蛋白闪式提取工艺优化计及其体外抗氧化活性研究 被引量:9

摘要 以豆腐柴(Premna microphylla Turcz)叶为原料,采用闪式提取法,以豆腐柴叶蛋白提取率为指标,考察不同闪提时间、闪提电压、液料比和pH对豆腐柴叶蛋白提取率的影响,采用响应面法优化豆腐柴叶蛋白提取工艺条件,并考察豆腐柴叶蛋白的体外抗氧化能力。结果表明,闪式提取豆腐柴叶蛋白的最佳工艺条件为闪提时间为164s、液料比(mL∶g)为42∶1、闪提电压为120V、pH为11.3,豆腐柴叶蛋白平均提取率为63.06%。豆腐柴叶蛋白对通DPPH自由基和超氧阴离子的清除实验显示其具良好的体外抗氧化活性。 Premna microphylla Turcz leaves used as raw material,the effect of different flash extraction times,flash extraction voltage,liquid to material ratio and pH on the extraction rate of Premna microphyllaleaf protein was investigated.The flash extraction process of Premna microphyllaleaf protein was optimized by response surface method,and the in vitro antioxidant activity of Premna microphyllaleaf protein was determined.The results showed that the best flash extraction conditions for Premna microphylla leaf protein were that the flash extraction time was 164 s,liquid to material ratio was 42∶1,flash extraction voltage was 120 V and pH was 11.3,and the average extraction rate of Premna microphyllaleaf protein was 63.06%.The scavenging experiments of DPPH·and O_2^-·show that Premna microphyllaleaf protein had good antioxidant activity in vitro.
