Nutritional Value of Banana Peel and its Application Status in Food Field

香蕉皮作为废弃物常被丢弃,造成了资源浪费。对香蕉皮回收利用的现状进行综述,一方面是从香蕉皮中提取营养物质的提取工艺现状,另一方面则是将香蕉皮直接应用于保鲜食品、吸附食品中重金属离子或开发新型食品等方面的现状,为香蕉皮的进一步的综合利用开发提供研究的参考依据。

Banana peels were discarded as waste,resulting in a waste of resources. A review of the current status of the recovery and utilization of banana peels. On the one hand,the nutrients contained in the banana peel and present situation of extracting nutrient from it. On the other hand,banana peel was directly used in fresh-keeping food,adsorption of heavy metal ions in food or development of new foods and so on. Finally,the prospect was presented,to provide reference for the further comprehensive utilization and development of banana peel.
