摘要
采用碱性蛋白酶、胃蛋白酶、中性蛋白酶对单环刺螠体壁进行酶解,以水解度为指标。结果表明,三种酶中胃蛋白酶在4 h达到最高水解度38.5%。比较三种酶解产物的抗氧化、总还原力和降血糖功能,中性蛋白酶酶解5 h的产物其亚铁离子螯合力最高,可达50%;DPPH自由基清除能力最高可达51.5%,为胃蛋白酶酶解3 h的产物;胃蛋白酶酶解4 h产物的总还原力最高;胃蛋白酶酶解2 h的酶解产物其DPP-4抑制率最高,可达41.3%。本研究为单环刺螠的综合利用提供了参考。
The body wall of Urechis unicinctus was hydrolyzed by using alkaline enzyme, pepsin, andneutral enzyme and the hydrolysis degree was as the index. The highest hydrolysis degree could reach38.5% by pepsin in 4 h among three enzymes. Antioxidant, total reducing power and hypoglycemicfunction of the hydrolysis by three kinds of enzymes were compared. The ferrous ion chelating of thehydrolysis reached 50% by neutral enzyme in 5 h, the highest DPPH radical scavenging capacity was51.5% by pepsin enzyme in 3 h, the highest total reducing power was hydrolyzed by pepsin in 5 h, thehighest DPP-4 inhibition rate reached 41.3% by pepsin enzyme in 2 h. This study provides a refer-ence to the comprehensive utilization of Urechis unicinctus.
