摘要
[目的]研究伊犁河谷湖羊羔羊肉品质。[方法]通过对伊犁河谷地区湖羊羔羊肉品质感官评定、肉品质常规项目测定以及氨基酸、粗蛋白、脂肪、铁、铜、锌、硒等测定,分析该地区的湖羊羔羊肉品质。[结果]湖羊公羔羔羊肉的品质优良,其市场前景十分广阔。[结论]该研究为伊犁河谷地区湖羊养殖企业、羊肉市场开发提供数据支撑和参考。
[Objective]To study the male lamb quality of Hu sheep in Yili River Valley.[Method] The male lamb quality of Hu sheep in Yili River Valley was analyzed by sensory evaluation,and routine items determination of meat quality,determination of amino acid,crude protein,fat,Fe,Cu,Zn,Se. [Result]The lamb quality of Hu sheep in Yili River Valley was very good,and its market prospect was very broad.[Conclusion]The study provides data support and reference for Hu sheep breeding enterprises and mutton market development in Yili River Valley.
