摘要
选择20个有代表性的云南核桃品种和13个北方核桃品种,采用氨基酸分析仪对其核桃仁中的氨基酸含量进行分析。结果表明:核桃仁中TAA与EAA呈相关性;主成分分析中云南核桃氨基酸提取了2个主成分,2个主成分的累积贡献率达到94.634%,说明这2个主成分基本概括了云南核桃仁中17种氨基酸的主要信息;而北方核桃仁中氨基酸提取了3个主成分,3个主成分的累积贡献率达94.026%,说明这3个主成分基本概括了北方核桃仁中氨基酸的主要信息;云南核桃与北方核桃在聚类分析中,云南云新系列核桃及漾濞泡核桃、三台核桃均聚于第1类,品质较好。而北方核桃均聚于第2类和第3类中,品质居中。通过对云南核桃和北方核桃氨基酸成分的综合分析与评价,筛选出蛋白质品质优良的核桃品种,为云南核桃良种选育、精深加工等提供理论依据。
20 representative walnut varieties in Yunnan and 13 Northern walnut varieties were selected in this study. Amino acid content in walnut kernel was analyzed by amino acid analyzer. The results showed that TAA and EAA were in correlation; After principal component analysis,2 main components of amino acids were extracted in Yunnan walnut,of which the cumulative contribution ratio reached 94. 634%,indicating that the 2 main components presented most fundamental information of 17 kinds of amino acids in Yunnan walnut kernel; and 3 main components of amino acid were extracted in Northern walnut,of which the cumulative contribution ratio reached94. 026%,indicating that the 3 main components presented most fundamental information of amino acids in walnut kernel in Northern walnut; After cluster analysis,it was found that three varieties such as Yunxin series,Yangbi Bubble Walnut and Santai Walnut could be clustered into the first class with good quality,while Northern walnuts were clustered into the second and third classes,and the quality was in the middle. Based on the comprehensive analysis and evaluation of amino acids in walnut mainly planted in Yunnan and Northern China,the walnut varieties with excellent protein quality were screened out,providing theoretical basis for breeding and intensive processing of walnut in Yunnan.
