清末潮州的屠业——以清末厘金制的推行为视角 被引量:1

摘要 清末厘金制在潮州的推行引发了持续性的以屠户为主的罢市乃至暴力冲突事件,但潮州的屠业运作管理基本走向正轨。同时,屠捐局、包商及地方官府的介入,逐渐改变了潮州屠业传统的分散式经营管理模式,对于平衡肉价、维护市场秩序、统一销售途径等起到了一定的作用,推动了地方屠业的发展及管理,使得潮州的屠业在清末已初具规模。此外,地方报纸、官府公告等对于抗捐事件的关注,也使潮州屠业的经营规模及基本运作情况逐渐为世人所了解。 The strike of the butchers and the violent conflict events in Chaozhou in the late Qing period were mainly caused by the implementation of the likin revenue.Howerver,it also objectively contributed to the business of meat in balancing the price,maintaining the order of market and unifying the sales channel.And that gradually changed the business into morden development and management.In addition,the report of the local newspapers and official statement on the event made the scale of operation and the basic operation of the situation gradually understood by the world.
