清末厘金制在潮州的推行引发了持续性的以屠户为主的罢市乃至暴力冲突事件,但潮州的屠业运作管理基本走向正轨。同时,屠捐局、包商及地方官府的介入,逐渐改变了潮州屠业传统的分散式经营管理模式,对于平衡肉价、维护市场秩序、统一销售途径等起到了一定的作用,推动了地方屠业的发展及管理,使得潮州的屠业在清末已初具规模。此外,地方报纸、官府公告等对于抗捐事件的关注,也使潮州屠业的经营规模及基本运作情况逐渐为世人所了解。
