摘要
泸菜历史悠久,理论体系完备,泸菜烹饪技艺在历史传承中不断创新发展。当前,应着重发展烹饪高等教育,弘扬师徒技艺传承,注重泸菜理论建设和文化研究,从食材、调味、器具、烹调等方面进行创新,走泸菜产业品牌集群发展之路,建设川南区域美食之都。
Luzhou cuisine has a long history with a complete theoretical system. The culinary technology of Luzhou cuisine can innovate and develop in the historical inheritance. At present,we should focus on the development of high education of culinary and promoting the inheritance of the skills. Meanwhile,we would better pay attention to the construction and cultural studies of the Luzhou cuisine. What's more,more innovation in food,containers,ingredients and seasoning,should be made in order to walk on the brand cluster industry development road and construct the food capital of southern Sichuan.
