枸杞紫苏功能性淡水鱼丸的研制 被引量:3

摘要 将枸杞和紫苏打成浆添加到鱼丸中,制成功能性鱼丸。通过正交试验确定了枸杞紫苏功能性鱼丸的最佳配方即鱼肉糜52%,枸杞浆7%,紫苏汁5%,马铃薯淀粉6%,鸡蛋清8%,水15%,糖2.5%,盐2.2%,料酒1.4%,味精0.6%,生姜0.3%。此产品风味独特,且富含多种功能性成分,具有营养保健功能,能满足广大消费者对其产品功能性需求。 The healthy fish-ball was made from Chinese wolfberry and purple perilla. Through orthogonal tests obtained the optimize formulation: surimi52%, Chinese wolfberry 7%, purple perilla juice5%, potato starch 6%, egg-white8%, water15%, sugar 2.5%,salt 2.2%, cooking wine 1.4%, aginomoto 0.6%, ginger 0.3%. This product has a unique flavor and a variety of functional components. It has the function of nutrition and health care. It can meet the functional needs of the consumers.
