摘要
林蛙卵是林蛙油生产过程中的副产物之一,因其年产量大且未能得到充分开发逐渐得到关注。林蛙卵含有多种营养成分,具有极高的药用和保健价值。近些年,多位专家和学者对林蛙卵的营养成分及保健功能进行了研究,重点阐述林蛙卵中多糖、不饱和脂肪酸、黑色素、蛋白质及氨基酸等营养成分,揭示其药用及保健价值,为林蛙卵的深加工提供科学依据。
The ovum of Rana chensinensis is one of the byproduct in the production of ovidutus ranae,whichhas been more attention because of its large annual output and insufficient utilization. The ovum of Ranachensinensis is rich in polysaccharide,polyunsaturated fatty acids,melanin and protein in the body,hasimportant health function. In recent years,the nutritional value and health function of ovum of Ranachensinensis were studied by many scholars,and the nutritive components such as polysaccharide,unsaturatedfatty acid,melanin,protein and amino acid in the ovum of Rana chensinensis were described,and itsmedicinal and health value were revealed,which provided a scientific basis for the deep processing of ovum ofRana chensinensis.
