摘要 硒是人体必需的微量元素,具有抗氧化、防癌抗癌、解毒排毒、提高机体免疫力等重要功能,维持机体适量的硒摄入能预防多种疾病。然而因全球普遍缺硒,膳食补硒已成为共识。富硒苹果作为膳食补硒的重要来源,如何安全生产受到广泛关注。该文对硒的生理功能及在果品生产中的应用作简单介绍,以期为富硒果品安全生产提供参考。 As an essential trace element in human body,selenium (Se) has functions of anti-oxidation, prevention and anti-cancer,detoxication and elimination of toxicant,improving the organism immunity. It can prevent many diseases if there is adequate selenium intake. However,the world is short of selenium. So it is a consensus to supplement selenium from a diet. As an important source of dietary selenium,Se-enriched apples have attracted a wide spread attention. How to produce Se-enriched apples safely becomes more and more important. This review introduced the physiological function of selenium and its application in fruits production briefly, so as to provide reference for producing Se-enriched apples safely.
