摘要
以乙醇水溶液为溶剂提取紫甘蓝色素,探讨了乙醇浓度、浸提温度、浸提时间、料液比等因素对色素提取率的影响,并采用正交试验方法优化了提取工艺。结果表明:提取的最佳工艺为提取温度55℃、乙醇浓度70%、料液比1︰4、提取时间为60 min,色素含量可达到11.93 mg/g。
The pigment of purple cabbage was extracted with mixture of water and alchol as solvent in this article. The effects of ethanol concentration, extraction temperature, extraction time and ratio of material to liquid on the extraction rate of pigment were discussed, and the optimum extraction of pigment were determined by method of orthogonal experiment. The results indicated that the optimum extraction of purple cabbage pigment was extraction temperature 55 ℃, ethanol concentration 70 %, ratio of material to liquid 1︰4, extraction time 60 min and the extraction yields achieved 11.93 mg/g.
