Food Physical Processing Technology and Its Basic Framework

摘要 传统食品加工技术经过长期的发展在加工效率和产品品质等方面面临愈来愈多的挑战,现代物理技术的应用成为迎接上述挑战的重要手段之一。相关研究的原理创立虽由来已久,但在20世纪初才广泛引起国内外学者的重视,发表的文献量大幅度增加。2010年之后,我国政府资助的科研项目中相关项目数量快速上升。食品物理加工技术按照物理场可分为热物理加工、非热物理加工和物理快速检测,按照食品加工方法可分为物理场在传统食品化学加工、传统食品生物加工、传统食品物理加工、食品物理检测中的应用。食品物理加工技术具有高效、绿色、环保、智能等优势与特色,非常符合食品产业未来的国际发展趋势。食品物理加工技术未来发展需要加强基础理论研究和关键技术突破,强化"物理-食品"复合型人才培养体系的建设,加快食品物理加工技术的学科体系建设,支持具有中国优势的现代食品工业体系的构建,引领食品产业可持续健康发展。 After long-term development, traditional food processing technology is facing more and more challenges in terms of processing efficiency and product quality. The application of modern physical technology has become an important way to meet these challenges. Although the principles of related research have been established for a long time, it has attracted widespread attention from scholars both at home and abroad in the early twentieth Century, and the number of published papers increased significantly. After 2010, the number of related projects in China′s government funded research projects began to rise rapidly. According to the physical field, food physical processing technology can be divided into thermal processing, non thermal physical processing and physical detection; according to the food processing method, it can be divided into application of physical fields in traditional food chemical processing, traditional food biological processing, traditional food physical processing, and food physical detection. The food physical processing technology has the advantages and characteristics such as high efficiency, green, environmental protection and intelligence. It is very consistent with the international development trend of the food industry in the future. The future development of food physical processing technology needs to strengthen basic theory research and key technological breakthrough, enhance the construction of the training system of physics and food inter-disciplinary talent, and speed up the construction of the discipline system of food physical processing technology in order to support the construction of the modern food industry system with China′s advantages and to lead the sustainable and healthy development of the food industry.
